New No-Bakes. Stages of Life

Kasey is about to have a baby!

Any day now.... any day. My money was on the super moon. Guess not. 

Pregnant or not pregnant, cravings are something K and I tend to share. We've been through some weird stages of outright addictions. Perhaps the worst (years of abstinence, thank you) was the devouring of the American Licorice family pack. First you'd eat a red vine, then a black vine, then a red, black... syrupy sweet, bitter, sweet, bitter... till the whole 2 lb. bag was gone in probably a week.

("That's a kilo!" --Zak, hearing us to recount this, appalled)

("One of the ingredients is whole wheat flour!" --Me, knowing full well that doesn't really offset the corn syrup and gluttony)

Our latest food-rut-indulgence is peanut butter. A jar a week. 

But the day I landed Kasey made some raw cookie dough balls... and well, we've been making them and making sure there's a plate in the freezer ever since. They are much like No Bake Cookies, which my friend Dianne *looooves* -- but these, like the licorice made with whole wheat flour, are on the *surface* healthier. So there you go. Make. Enjoy. Repeat. xo

Here's the recipe (you'll need a food processor):

Raw Chocolate Chip Cookie Dough Ball:

2/3 cup nuts

2/3 cup nuts 

2/3 cup oatmeal

1 - 2 tsp vanilla

1/8 - 1/4 cup honey

dash of salt

1/4 cup chocolate chips or chopped chocolate bar

Blitz the nuts and the oatmeal together in the food processor till they're about the consistency of bread crumbs. Add the vanilla and the honey and dash of salt till the mixture becomes sticky and roll-a-able. Mix in the chocolate chips. Roll tablespoons of the mixture in the palm of your hands, put on a plate and freeze. Eat (if you can wait) once they have firmed up!


To instantly turn into traditional No-Bake Cookie Cocoa version: add approx 1/4 cup cocoa powder when you add the honey & vanilla.
